Stuffed Pork Chops

Two stuffed chops. One for you. The other... that's up to you.

INGREDIENTS
Butter
1/2 pound of Chorizo or pork sausage
1 sweet potato. Cut it into little cubes.
2 green onions. Chopped up.
2 pork chops. Cut at least 1-inch thick by your butcher.
Salt
Black pepper

OVEN
Preheat oven to 350.

STUFFING
Melt butter in a pan. Add the pork sausage. Cook thoroughly. Remove the pork from the pan. Leave the drippings. Throw into the same pan the sweet potato. Cook until soft. Bring back the pork into the pan. Throw in the onions. That's the stuffing for the chops.

CUT
Cut into the chop. The fatty side. Don't cut all of the way through. Just cut an opening into which you'll stuff the stuffing. Make it more like a pocket, and less like a sandwich. Mush around some salt and pepper inside the pouch. 

STUFF
Stuff the chop with the Chorizo & potato stuffing. As much as you can fit in there. The pouch opening can be secured with a toothpick. 

COOK
Butter a pan on the stove. High heat. Sear the stuffed chops for 2 minutes on each side. Seal the juices in. Make each side a little brown. Then pop the chop in the oven. cook for 10-15 minutes. Use a thermometer probe to check the inside temperature. I like 165. Well done.
