If you wanted mashed potatoes without the potatoes (carbs), then this might be it. Mashed cauliflower is paleo. And manly.
3 cups of cauliflower. Break up a head into smaller bits.
1 clove of garlic. Crush and finely chop it into a teaspoon or tablespoon.
2 tablespoons of coconut oil. Don't have it? No biggy.
1/2 cup of coconut milk. I prefer heavy whipping cream.
1 stick of butter
Chives. Chop them up.
Cook the cauliflower. Boiling water. Until soft.
Drain. Let it steam away. You don't want wet cauliflower. Dry it out a bit.
Mash the cauliflower. Blender is great.
Add milk. Not too much.
Add butter. The whole thing.
Add coconut oil.
Throw some salt and pepper and chives and nutmeg in there.
